In 1805, the Mitchell & Sons Wine Merchants Company was established in the heart of Dublin, Ireland. By the turn of the 19th century, the Mitchells sold a range of Irish whiskeys under the name "Spot." This name originated from the company's practice of marking casks of different ages with a spot of colored paint. As a result, Mitchell & Sons sold whiskies named Blue Spot, Yellow Spot and Red Spot, although Green Spot emerged as their most popular brand.
While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex-Malaga casks contributes exotic characteristics to the whiskey.
Look for aromas of freshly-mown hay and cracked black pepper followed by red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks on the end of the perfume. In the mouth, a beautiful honey sweetness with pot still spice flavors emerge. Notes of fresh coffee, creamy milk chocolate, Crème Brûlée, red apples and toasted oak linger. Then the finish is sophisticated and complex with a sweetness throughout, followed by a mix of red grape and dry barley upon exit.
Today, Yellow Spot Single Pot Still Irish Whiskey continues to be crafted in the heart of Ireland. The whiskey is made from malted and unmalted barley, which are milled and mashed before being distilled through a traditional pot still. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks before being brought to proof.
The story of Yellow Spot is truly a tale befitting Spot whiskeys. For after the struggles of the Irish whiskey trade post World War II, Yellow Spot fell out of circulation. It wasn’t until a chance discovery in the little Museum Of Dublin of an old bottle of Yellow Spot—intact—that the real revival and recreation of Yellow Spot could begin. The Mitchells delved back through their recipe books and bills of lading to find the exact recipe for Yellow Spot and, when combined with the bottle, they were able to resurrect this noble bottling. Affectionately known as The Dubliner’s Tipple of Choice.
